400g of dark spelt flour, type 1100
4dl of sparkling water
4dl of milk
1dl of refined oil
3 eggs
Pinch of salt
Mix all the ingredients together and put the eggs at the end. The mixture should be smooth. Fry the pancake on both sides in a lubricated and preheated pan. Put the baked pancakes in a plate and cover them so they don’t become dry. Put any kind of fill you wish ?
