Dark rye flour has all the bran and the germ in the flour unlike light rye flour. From all the cereals rye contains the highest amount of dietary fibers and it is a great cereal for the diet because a smaller amount of it can make us stuffed longer. From vitamins rye flour has the highest amount of thiamine-vitamin B1 (21% of daily requirement) and niacin, then riboflavin, folate and vitamin B6. From minerals, rye contains manganese – in 100 grams there is more than enough daily amount, selenium, phosphorus, magnesium, zinc, copper, iron. Rye has a relatively high protein content for cereals: 30% in a hundred grams. Rye contains gluten. Rye helps in weight loss (rye bread saturate more), prevents the bile duct stone, it is recommended for diabetics and people with stomach ulcer, it lowers cholesterol and preserves the health of the heart, it has an anti-inflammatory effect and fights free radicals, promotes digestion and hormonal work.
RYE-WHEAT DARK BREAD WITH OREGANO
250g of dark rye flour type 1250
500g of wheat whole grain flour
3dl of water
15g of yeast
2 tea spoons of oregano
2 tea spoons of sesame
1 tea spoon of salt
Mix all the ingredients together. Put a water in it and mix the dough, till it becomes smooth. Wait till the dough improves; then mix the dough again. Form one loaf or few smaller loafs. Wait till the dough improves again and then bake the bread in the preheated oven at 240 degrees, for about 30 minutes.
