Dark wheat flour is a high-quality flour that contains a large amount of vitamins, minerals and dietary fibers. It contains about 80% of ingredients from the external membrane. According to its nutritional characteristics, it is high quality flour because it contains vitamins, minerals, and dietary fibers. It is used in the household primarily for the preparation of sour dough products (bread, pastry …). The bread made of black flour has a moist environment, full flavor, and above all it keeps freshness longer than white bread. Wheat flour is rich in minerals such as phosphorus, calcium, magnesium, chlorine, and potassium. Protein gluten is responsible for structure of the dough. In flour there is very small quantities of vitamins and most of them are from vitamin B group.
BREAD WITH BEER WITHOUT YEAST
500g of wheat dark flour type 1100
12g of baking powder
½ tea spoon of salt
½ tea spoon of caraway for dough and little bit more for sprinkling
pinch of sweet paprika powder
2,5dl of beer
30g melted butter
big grains salt by your own taste
Put baking powder in a flour and then add salt, caraway, paprika powder and 2/3 of melted butter (20g). Mix all the ingredients. Mix the dough and slowly add beer in it till it bcomes smooth. Form a loaf of bread, coat it with a rest of melted butter and sprinkle it with caraway and salt. Put the loaf in a preheated oven at 240 degrees and bake it for about 30 minutes, till the crust gets golden brown. Enjoy your meal!
